Stuffed Butternut Squash

We grew butternut squash on our farm and had so many squash. It became a favourite of my daughter's. I baked it in the microwave and it was economical and tasty. I looked for ways to make the squash a complete meal and since we loved ground beef and cheese, decided to cook the squash, fill it with the ground meat mixture and top it with cheese. With a loaf of french bread, it is a complete meal.

Method

Preheat oven to 350 degrees. Saute garlic and mushrooms until soft, Remove from pan and brown ground beef. Add the garlic and mushrooms, ketchup and salt and pepper to taste. Cut the butternut squash lengthwise, scoop out and discard seeds. Place squash cut side down on a plate and cover with waxed paper. Microwave on high for 4 - 5 minutes or until tender. Test with a fork. When almost done, turn squash over, put butter in cavity, sprinkle with salt and pepper, and put back in microwave for a few minutes until completely cooked. Use a fork to mix butter into squash and put the ground beef mixture on top of each half of the squash. Grate cheese on top and bake in oven until the cheese melts.
