OK, we cheated a little: This recipe actually takes around 16 minutes to prepare, once you include the 30 to 60 seconds it takes to mix everything together. But these addictive sugarand- spice-crusted nuts are worth the extra minute. Pecans and walnuts, with their nooks and crannies, work best. The egg white is the secret to getting the seasonings to stick.

Ingredients

  • 1 egg whites
  • 4 cups mixed nuts (such as pecan halves, walnut halves, natural almonds and hazelnuts)
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1 pinch cayenne pepper

Method

In bowl, whisk egg white until frothy; add nuts, brown sugar, salt, garlic powder and cayenne pepper. Stir until coated.

Spread nuts on rimmed baking sheet; bake in 375ºF (190ºC) oven until nuts are glazed and sugar is caramelized, about 15 minutes.

Let cool on pan on rack. Break up any large clusters. (Make-ahead: Store in airtight container for up to 2 days.)
