Sweet Potato Pumpkins

Ingredients

  • 5 sweet potatoes
  • 1/4 teaspoon each salt and pepper
  • 2 tablespoons vegetable oil

Method

Peel 5 sweet potatoes; cut lengthwise into 2-inch (1 cm) thick slices. Using 3-inch (8 cm) pumpkin-shaped cutter, cut out shapes. Toss with 2 tbsp (25 mL) vegetable oil and 1/4tsp (1 mL) each salt and pepper. Bake on baking sheet in 375ºF (190ºC) oven, turning once, for 30 minutes or until tender.
