Tomato Pesto Dressing

This dark, rich-tasting but lightened-up dressing is delicious drizzled on cold or warm cooked green beans or even a grilled chicken breast, hamburger or fish fillet.

Ingredients

  • 1 cup tomato juice
  • 1/3 cup drained oil packed sun dried tomatoes patted dry
  • 2 tablespoons pesto
  • 1 tablespoon balsamic vinegar

Method

In blender or food processor, pur?together tomato juice, tomatoes, pesto and vinegar. (Make-ahead: Refrigerate in airtight container for up to 5 days.)
