In a non-stick skillet, brown the ground turkey on medium-high heat. Drain off excess fat if necessary. Place in bowl and let cool 5 minutes. Add ricotta cheese, egg, garlic, spinach, and salt and pepper. Stir to combine filling. Place scallopine vertically on work surface and add 1 to 2 tbsp of filling at one end (depending on size of scallopine). Roll up and secure with toothpicks. Add vegetable oil to nonstick skillet and heat over medium-high heat. Brown roll-ups on all sides. Add 1/2 cup of pasta sauce to bottom of a baking dish and add browned roll-ups. Cover with remaining sauce and sprinkle with mozzarella cheese. Bake in 375ºF oven for 25 to 30 minutes and cheese is brown and bubbling.
