Warm Potato Salad

Ingredients

  • 4 potatoes peeled (if desired) and cubed
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup diced celery
  • 1/2 cup diced sweet green pepper
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons chopped fresh parsley

Method

In saucepan of boiling salted water, cover and cook potatoes until tender, 10 minutes. Drain and transfer to bowl; let cool for 10 minutes.

Meanwhile, in small bowl, whisk together olive oil, wine vinegar, Dijon mustard, salt and pepper. Pour over potatoes. Add celery, green pepper and basil. Toss together.
