Method
Using vegetable peeler, cut zucchini into ribbon-thin slices; place in bowl. Toss with oil, vinegar, oregano, salt and pepper. Transfer to grill basket. Place on grill over medium-high heat; close lid and cook for 3 to 5 minutes or until softened. Return to bowl; toss with tomatoes, and pine nuts (if using).
