Fresh, juicy watermelon tossed with crisp fennel makes a wonderful sweet and savoury salad. Try it as a side dish with your favourite grilled meat.

Ingredients

  • 1 tablespoon white wine vinegar
  • 1 tablespoon extra-virgin olive oil
  • pinch each salt and pepper
  • 2 cups seeded watermelon cubes
  • 2 cups diced fennel bulbs
  • 1 green onion thinly sliced
  • 2 tablespoons shaved Romano cheese (about 1 oz/30 g)

Method

In bowl, whisk together vinegar, oil, salt and pepper; add watermelon, fennel and green onion. Toss gently to coat; top with Romano cheese.
