  • 2 zucchinis unpeeled, seeded and quartered lengthwise
  • 2 teaspoons olive oil
  • 1 red pepper diced
  • 1 yellow pepper diced
  • 1 orange pepper diced
  • 1/2 teaspoon lemon pepper
  • 2 teaspoons balsamic vinegar


Cut quartered zucchini crosswise into 1/2 inch pieces.

Heat olive oil in large non-stick frying pan or wok on medium high. Add zucchini, red pepper and yellow peppers and lemon pepper. Stir-fry for 5-7 minutes until tender crisp.

Sprinkle with balsamic vinegar and pepper. Stir and serve immediately.
