- 2 zucchinis unpeeled, seeded and quartered lengthwise
- 2 teaspoons olive oil
- 1 red pepper diced
- 1 yellow pepper diced
- 1 orange pepper diced
- 1/2 teaspoon lemon pepper
- 2 teaspoons balsamic vinegar
MethodCut quartered zucchini crosswise into 1/2 inch pieces.
Heat olive oil in large non-stick frying pan or wok on medium high. Add zucchini, red pepper and yellow peppers and lemon pepper. Stir-fry for 5-7 minutes until tender crisp.
Sprinkle with balsamic vinegar and pepper. Stir and serve immediately.
