To say that beans are a substitute for meat seems to imply that they're inferior. Nothing could be further from the truth — just try this lusty Slavic salad.
Ingredients
- 2 cans (19 oz/540 ml) well drained red kidney beans 2 2cans (19 oz/540 ml) cans (19 oz/540 ml)well drained red kidney beanred kidney beans
- 1/4 cup coarsely chopped walnuts 1/4 1/4cup cupcoarsely chopped walnutwalnuts
- Sauce
- 1/4 cup minced onions 1/4 1/4cup cupminced oniononions
- 1 clove of garlic 1 1clove of garlic
- 2 tbsp chopped fresh parsley 2 2tbsp tbspchopped fresh parsley
- Pinch cayenne pepper Pinch Pinchcayenne pepper
- 1/4 tsp ground coriander 1/4 1/4tsp tspground coriander
- 2 tbsp red wine vinegar 2 2tbsp tbspred wine vinegar
- 2 tbsp olive oil 2 2tbsp tbspolive oil
- 1/2 tsp salt 1/2 1/2tsp tspsalt
Preparation
In bowl, combine beans and walnuts.
Sauce: Blend together ingredients and add to bean mixture. Cover and marinate in refrigerator overnight; taste and adjust seasoning.
