Red Beans and Walnuts with Garlic Sauce

To say that beans are a substitute for meat seems to imply that they're inferior. Nothing could be further from the truth — just try this lusty Slavic salad.

Servings: 16 small servings

Ingredients:

    2 cans (each 19 oz/540 mL) red kidney beans, well-drained
    1/4 cup (50 mL) coarsely chopped walnuts
    Sauce:
    1/4 cup (50 mL) minced onion
    1 clove garlic
    2 tbsp (25 mL) chopped fresh parsley
    Pinch cayenne pepper
    1/4 tsp (1 mL) ground coriander
    2 tbsp (25 mL) red wine vinegar
    2 tbsp (25 mL) olive oil
    1/2 tsp (2 mL) salt

Preparation:

In bowl, combine beans and walnuts.

Sauce: Blend together ingredients and add to bean mixture. Cover and marinate in refrigerator overnight; taste and adjust seasoning.
