Get your grains deliciously in this creamy alternative to porridge. Store it in the refrigerator for up to three days to scoop out one serving at a time. It's great cold or, if you wish, warm it up in the microwave.

Ingredients

  • 2-1/2 cups milk
  • 1/2 cup short-grain rice
  • 2 tbsp granulated sugar
  • 1/2 tsp grated orange rind
  • 1 Pinch salt
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/3 cup raisins, (optional)

Preparation

In saucepan, combine milk, rice, sugar, orange rind and salt ; bring to boil over medium heat. Reduce heat to medium-low; cover and simmer for 25 to 30 minutes or until rice is tender and most of the liquid is absorbed.

In bowl, whisk eggs; pour in half of the rice mixture, whisking constantly. Stir back into saucepan; cook, stirring, for 1 minute. Stir in vanilla; add raisins (if using). Transfer to bowl. (Pudding can be covered with plastic wrap directly on surface and stored in refrigerator for up to 3 days.)

 

Additional information :

Tip: If desired, stir in chopped oranges or mangoes; sliced strawberries, peaches or nectarines; or blueberries.
