A New Orleans-style spice rub jazzes up swordfish steaks without adding fat. For cooler tastes, cut chili powder in half.

Ingredients

  • 1 tbsp lime juice or lemon juice
  • 1-1/2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 4 swordfish steaks or halibut steaks or salmon steaks, (1-1/2 lb/750 g total )

Preparation

In small bowl or glass measure, whisk together lime juice, 2 tsp (10 mL) water, chili powder, paprika, pepper, oregano, thyme, garlic powder and salt ; rub gently onto both sides of fish steaks.

Place on foil-lined baking sheet; roast in 425°F (220°C) oven for about 10 minutes or until fish flakes easily with fork

 

Additional information :

Tip: Try shark steaks, too. This rub also works well with fillets as long as they are at least 3/4 Inch (2 cm) thick. Choose monkfish, catfish, whitefish or snapper.
