These “candied” tomatoes are the perfect condiment for just about any sandwich.

Ingredients

  • 2-1/4 cups grape tomatoes , halved2-1/4 cups grape tomatoes or cherry tomatoes, halved
  • 1 tbsp olive oil 1 tbsp olive oil
  • 1-1/2 tsp balsamic vinegar 1-1/2 tsp balsamic vinegar
  • 1/4 tsp salt 1/4 tsp salt

Preparation

In 8-inch (2 L) square baking dish or ovenproof skillet, toss together tomatoes, oil, vinegar and salt.

Roast in 400°F (200°C) oven until shrivelled, 30 to 35 minutes.
