Roasted Salmon with Prosciutto

Ingredients

1/4 cup (50 mL) Dijon mustard
2 tbsp (25 mL) chopped fresh chives or green onions
1/4 tsp (1 mL) pepper
4 skinless salmon fillets (each 6 oz/175 g)
4 thin slices prosciutto (about 2 oz/60 g)
Preparation
In small bowl, mix together mustard, chives and pepper; spread over both sides of salmon.
Place each fish fillet, bottom side down, on prosciutto slice; wrap around fish. Place fish, prosciutto seam side up, on parchment paper-lined baking sheet; roast in 425°F (220°C) oven for 10 to 15 minutes or until fish is opaque and flakes easily
