Romaine and Cabbage Salad With Greek Yogurt Dressing

While most Greek salads are simply dressed with lemon and olive oil, we add Greek-style yogurt and a few untraditional add-ins for a twist on the familiar classic.

  • 8 cups 8cupstorn romaine lettuce
  • 2-1/2 cups 2-1/2cupshalved cherry tomatoes
  • 2 cups 2cupsthinly sliced red cabbage
  • 1 1Cubanelle pepperCubanelle peppers or sweet green pepper, thinly sliced
  • 1/2 1/2fennel bulbfennel bulbs, thinly sliced
  • 4 4green oniongreen onions, finely chopped
  • 3 tbsp 3tbspsunflower seedsunflower seeds
  • 1/3 cup 1/3cupcrumbled feta cheese

Greek Yogurt Dressing:

  • 1/2 cup 1/2cupGreek-style yogurtGreek-style yogurt
  • 1/4 cup 1/4cupextra-virgin olive oil
  • 1/4 cup 1/4cupcrumbled feta cheese
  • 3 tbsp 3tbspfinely chopped fresh dill
  • 3 tbsp 3tbsplemon juice
  • 1 1clove garliccloves of garlic, minced
  • 3/4 tsp 3/4tspdried Greek oreganodried Greek oregano
  • 1/2 tsp 1/2tsppepper

Greek Yogurt Dressing: Stir together yogurt, oil, feta cheese, dill, lemon juice, garlic, oregano and pepper; set aside.

In large bowl, combine romaine, tomatoes, cabbage, Cubanelle pepper, fennel, green onions and sunflower seeds. Pour dressing over top; toss to coat. Sprinkle with feta.
