This dressing can be made ahead and refrigerated. Just give it a good whisk to re-emulsify before serving.
Ingredients
- 6 cups 6cupschopped romaine lettuce
- 2 cups 2cupsshredded radicchio lettuce
- 1 1small sweet onionsweet onions, thinly sliced
- 1/2 cup 1/2cupcrumbled feta cheese Lemon Caper Dressing:
- 2 tbsp 2tbspminced fresh parsley
- 2 tbsp 2tbspminced sweet onion
- 2 tbsp 2tbspextra-virgin olive oil
- 2 tbsp 2tbspvegetabIe oil
- 2 tbsp 2tbsplemon juice
- 1 tsp 1tspdrained rinsed capers
- 1/4 tsp 1/4tspsalt
- 1/4 tsp 1/4tsppepper
- 1/4 tsp 1/4tspgranulated sugar
Preparation
Lemon Caper Dressing: In small food processor or blender, purée together parsley, onion, olive oil, vegetable oil, lemon juice, capers, salt, pepper and sugar until fairly smooth and creamy.
In salad bowl, combine romaine, radicchio and onion; sprinkle with cheese. Toss with dressing just before serving.
