A traditional bellini has peach juice and sparkling white wine; here, ruby red berries and grapefruit juice add a new twist.

Ingredients

  • 2 cups 2cupsfresh raspberryfresh raspberries
  • 4 cups 4cupsruby red grapefruit juice
  • 2 bottles (750 mL each) 2bottles (750 mL each)sparkling white wine or champagne
  • 1 can (355 mL) 1can (355 mL)frozen raspberry cocktail concentrate, thawed

Preparation

Spread raspberries on waxed paper-lined rimmed baking sheet; freeze until berries are solid, about 4 hours. (Make ahead: Transfer to airtight container and freeze for up to 2 days.)

In punch bowl or pitcher, combine red grapefruit juice, sparkling wine and raspberry cocktail concentrate; add frozen raspberries.
