Ingredients

- 3/4 tsp salt 3/4 3/4tsp tspsalt
- Fresh sage leaf Fresh sage leafFresh sage leaves
Preparation
Peel and cube potatoes. Parboil in boiling salted water for 5 minutes. Drain and let cool slightly or refrigerate for up to 24 hours.
Spread on large baking sheet; toss with olive oil, salt and a few fresh sage leaves.
Roast in 325°F (160°C) oven for 1 hour. Increase heat to 450°F (230°C); roast, turning once, until tender, crispy and golden, about 25 minutes.
