Ingredients

  • 3 lb Yukon Gold potatoes , (6 to 8 potatoes)3 lb Yukon Gold potatoes, (6 to 8 potatoes)
  • 3 tbsp olive oil 3 tbsp olive oil
  • 3/4 tsp salt 3/4 tsp salt
  • Fresh sage leaf Fresh sage leaf

Preparation

Peel and cube potatoes. Parboil in boiling salted water for 5 minutes. Drain and let cool slightly or refrigerate for up to 24 hours.

Spread on large baking sheet; toss with olive oil, salt and a few fresh sage leaves.

Roast in 325°F (160°C) oven for 1 hour. Increase heat to 450°F (230°C); roast, turning once, until tender, crispy and golden, about 25 minutes.
