Ingredients

  • 1 tsp vegetable oil
  • 1/2 sweet red pepper, thinly sliced
  • 1/2 sweet yellow pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 tsp hot pepper flakes, optional
  • 1/4 cup minced fresh coriander or parsley
  • 2 tbsp dry white wine
  • 1 tbsp tomato paste
  • 1/4 tsp salt

Preparation

In skillet, heat oil over medium heat; fry red and yellow peppers, garlic, and hot pepper flakes (if using) until peppers are tender-crisp, about 5 minutes. Stir in coriander, wine, tomato paste and salt ; cook until liquid is evaporated, about 3 minutes.
