Ingredients
- 1 tsp vegetable oil 1 1tsp tspvegetable oil
- 1/2 sweet red pepper , thinly sliced1/2 1/2sweet red pepper, thinly sliced
- 1/2 sweet yellow pepper , thinly sliced1/2 1/2sweet yellow pepper, thinly sliced
- 2 cloves garlic , minced2 2cloves garlic, minced
- 1/4 tsp hot pepper flakes , optional1/4 1/4tsp tsphot pepper flakes, optional
- 1/4 cup minced fresh coriander 1/4 1/4cup cupminced fresh coriander or parsley
- 2 tbsp dry white wine 2 2tbsp tbspdry white wine
- 1 tbsp tomato paste 1 1tbsp tbsptomato paste
- 1/4 tsp salt 1/4 1/4tsp tspsalt
Preparation
In skillet, heat oil over medium heat; fry red and yellow peppers, garlic, and hot pepper flakes (if using) until peppers are tender-crisp, about 5 minutes. Stir in coriander, wine, tomato paste and salt ; cook until liquid is evaporated, about 3 minutes.
