Ingredients
- 1 tsp vegetable oil 1 1tsp tspvegetable oil
- 1/4 cup chopped onions 1/4 1/4cup cupchopped oniononions
- 1/4 cup chopped carrots 1/4 1/4cup cupchopped carrotcarrots
- 1/4 cup chopped celery 1/4 1/4cup cupchopped celery
- 1/4 tsp dried thyme 1/4 1/4tsp tspdried thyme
- Shrimp , and lobster shellsShrimp, and lobster shells
- 1-1/4 cups water 1-1/4 1-1/4cups cupswater
- 1 bay leaf 1 1bay leafbay leaves
Preparation
In saucepan, heat vegetable oil over medium heat; fry onion, carrot and celery and thyme until softened, about 5 minutes.
Add shrimp and lobster shells; fry for 1 minute. Add water and bay leaf; bring to boil. Reduce heat, cover and simmer for 20 minutes. Strain.
(Make-ahead: Let cool for 30 minutes; refrigerate, uncovered, until cold. Cover and refrigerate for up to 4 hours.)
