Seashell Waldorf
This recipe makes 4 servings
Ingredients
- 3 cups small shell pasta
- 2 apples, cored and chopped
- 2 celery stalks, chopped
- 1/2 cup toasted walnuts or pecans, coarsely chopped
- 1/2 cup raisins, (optional)
- Dressing:
- 2 tbsp wine vinegar
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 dash hot pepper sauce
- 1/4 cup light mayonnaise
- 1/4 cup light sour cream
- 1 cup reserved pasta cooking liquid
- 1 tbsp sweet mustard
Preparation
In large pot of boiling salted water, cook pasta for 8 to 10 minutes, or until tender but firm. Drain, reserving a cupful of cooking liquid. Rinse under cold running water; drain well.
In large bowl, toss pasta with apples, celery, nuts and optional raisins.
Dressing: In small bowl, whisk together wine vinegar, olive oil, salt, pepper, hot peper sauce, reserved cooking liquid, mayonnaise, sour cream and mustard. until blended.
Toss with pasta to coat.
