Tomatillo Salsa

Makes: 8 cups

Ingredients:
4 sweet green peppers (2 lb/900 g)
6 jalapeƱo peppers
6 cups chopped tomatillos (about 2 lb/900 g)
2 cups chopped white onions
4 cloves garlic, minced
2/3 cup white wine vinegar
3-1/2 tsp salt
1 tbsp granulated sugar
1 tsp ground coriander seeds
1 tsp ground cumin
1/4 tsp pepper
3/4 cup finely chopped fresh cilantro
1/2 cup finely chopped fresh parsley
1/4 cup lime juice
