Semolina Dessert
Aiesha Aggarwal, a student at Couchiching Heights Public School, refers to this dessert as "delicious, divine and delectable." It is to be part of a book titled Yummylicious from the Orillia & Area Nutrition Network.

Ingredients:

2/3 cup (150 mL) water
1/2 cup (125 mL) granulated sugar
3 tbsp (50 mL) butter or ghee
3/4 cup (175 mL) semolina
3 cardamom pods
1/2 cup (125 mL) sliced almonds, toasted
1/4 cup (50 mL) raisins
Preparation:
In heavy saucepan, bring water and sugar to boil, stirring until sugar is dissolved. Boil for 1 minute; set aside.
In large heavy skillet, melt butter over medium heat. Add semolina and cook, stirring constantly, until starting to turn golden brown, about 15 minutes. Remove from heat and let cool slightly.
Crack cardamom pods and remove seeds; crush finely. Add sugar syrup and cardamom. Return to low heat and cook, stirring, until spoon scraped along bottom of pan leaves gap that fills in slowly, 3 to 5 minutes. Add half each of the almonds and raisins. Divide among serving bowls; sprinkle with remaining almonds and raisins.
