Ingredients

  • 4 whitefish fillets, about 1 lb/500 g
  • 1/4 cup extra-virgin olive oil
  • 8 cloves garlic, halved
  • 1/2 cup shredded fresh basil
  • 2 tbsp lemon juice
  • 1 tsp pepper
  • 1 tsp grated lemon rind

Preparation

In shallow glass baking dish, arrange fillets in single layer; sprinkle with oil and garlic. Sprinkle with basil and lemon juice. Turn fillets over; cover and marinate in refrigerator for 1 hour or for up to 4 hours.

Letting marinade drip off, place fish and garlic on hot cast-iron or nonstick griddle or in skillet over medium-high heat. Sprinkle with half each of the pepper and lemon rind; fry for 2 minutes.

With long spatula, turn fillets; sprinkle with remaining pepper and lemon rind. Fry until fish flakes easily when tested, about 5 minutes. Serve with garlic.
