Ingredients
- 4 whitefish fillets , about 1 lb/500 g4 4whitefish filletwhitefish fillets, about 1 lb/500 g
- 1/4 cup extra-virgin olive oil 1/4 1/4cup cupextra-virgin olive oil
- 8 cloves garlic , halved8 8cloves garlic, halved
- 1/2 cup shredded fresh basil 1/2 1/2cup cupshredded fresh basil
- 2 tbsp lemon juice 2 2tbsp tbsplemon juice
- 1 tsp pepper 1 1tsp tsppepper
- 1 tsp grated lemon rind 1 1tsp tspgrated lemon rind
Preparation
In shallow glass baking dish, arrange fillets in single layer; sprinkle with oil and garlic. Sprinkle with basil and lemon juice. Turn fillets over; cover and marinate in refrigerator for 1 hour or for up to 4 hours.
Letting marinade drip off, place fish and garlic on hot cast-iron or nonstick griddle or in skillet over medium-high heat. Sprinkle with half each of the pepper and lemon rind; fry for 2 minutes.
With long spatula, turn fillets; sprinkle with remaining pepper and lemon rind. Fry until fish flakes easily when tested, about 5 minutes. Serve with garlic.
