Shredded Pork Chef's Salad

Skip the usual cold cuts on this dinner salad in favour of ultra-delicious braised pork. The creamy, tangy dressing cuts the richness of the meat and is nice on plain green salads, too. Feel free to add or substitute any vegetables you have in your fridge – a chef's salad is a great way to clean out the crisper.

Ingredients

  • 6 cups 6cupstorn romaine lettuce
  • 1 cup 1cuphalved grape tomatogrape tomatoes
  • 1 cup 1cupsliced, quartered English cucumber
  • 1 cup 1cupSlow Cooker Shredded Pork
  • 1/2 cup 1/2cupgrated carrot
  • 2 2hard-cooked eggs, quartered
  • 55 g 55gmozzarella or Havarti cheese, cut in thin strips

Creamy Caper Dressing:

  • 2 tbsp 2tbsplight mayonnaise
  • 2 tbsp 2tbspextra-virgin olive oil
  • 1 tbsp 1tbspchopped, rinsed, drained capercapers
  • 1 tbsp 1tbspwhite wine vinegar
  • 1 tsp 1tspDijon mustard
  • Pinch Pincheach salt and pepper

Preparation

Creamy Caper Dressing: Whisk together mayonnaise, oil, capers, vinegar, mustard, salt and pepper until combined; set aside.

On serving platter, mound lettuce. Arrange tomatoes, cucumber, pork, carrot, eggs and cheese on top. Serve with dressing.
