Shrimp Canapes

Ingredients
- 12 large shrimp, peeled and deveined
- 12 slices pumpernickel cocktail bread
- 12 slices unpeeled English cucumber
- 3 tbsp light mayonnaise
- 1 tbsp chopped fresh chives
- 1/2 tsp lemon juice
- 1 Pinch salt
- 1 Pinch pepper
- Fresh chives
- Lemon slices, (optional)
Preparation
In pot of simmering salted water, poach shrimp for 2 to 3 minutes or just until pink. Drain well and let cool. (Can be covered and refrigerated for up to 8 hours.)
Place bread slices on serving tray; top each with cucumber slice, then shrimp. In small bowl, stir together mayonnaise, chives, lemon juice, salt and pepper. Dot top of each shrimp with dollop of mayonnaise mixture. Garnish with fresh chives, and lemon (if using).
