Fresh cold-water shrimp salad on a slice of crisp, cool cucumber makes a refreshing summer hors d'oeuvre.

Ingredients

  • 6 oz cooked cold-water salad shrimp , chopped6 oz cooked cold-water salad shrimp, chopped
  • 1 firm ripe avocado , pitted, peeled and diced1 firm ripe avocado, pitted, peeled and diced
  • 2 tbsp chopped fresh parsley 2 tbsp chopped fresh parsley

Preparation

In bowl, stir together shrimp, avocado, parsley, mayonnaise, lemon juice, salt and pepper.

Place about 1 tbsp on each cucumber slice.
