Recent research shows that 75 per cent of Canadians spend less than 15 minutes preparing breakfast. This single serving roll-up only takes a couple of minutes to prepare and one minute to cook, making it easy for everyone to stay on schedule.

Ingredients

  • 1 egg
  • 1 tbsp milk
  • 1 Pinch salt
  • 1 Pinch pepper
  • 1/4 tsp vegetable oil
  • 1 7-inch (18 cm) flour tortilla
  • 1 tbsp shredded brick cheese
  • 1 tsp chopped fresh parsley, (optional)

Preparation

Whisk together egg, milk, salt and pepper. Heat 6-inch (15 cm) nonstick skillet over medium-high heat; brush with oil. Pour in egg mixture, tilting to spread evenly; cook, piercing any bubbles, for about 1 minute or until set. Slide onto tortilla; sprinkle with cheese, and parsley (if using). Roll up.

Additional information :

Tip: Try any combination of herbs and cheese, such as Cheddar and chives, or mozzarella and basil.
