Sloppy Salsa Joes
This plain old favourite gets spiced up with south-of-the border flavour. Heat up some of the Sloppy Salsa Joes mixture in the morning and pop it into a vacuum bottle. Pack a kaiser bun or tortilla along with a spoon so your child can assemble it at school.

1 lb (500 g) lean ground beef
1 onion, chopped
Half sweet green pepper, chopped
1/2 tsp (2 mL) chili powder
2 cups (500 mL) mild salsa or chili sauce
1/4 cup (50 mL) tomato juice
6 kaiser rolls or tortillas
Preparation:
In nonstick skillet, sauté beef over medium-high heat, breaking up with spoon, until no longer pink, about 5 minutes. Drain off any fat.
Add onion, green pepper and chili powder; cook over medium heat, stirring often, until onion is softened, about 5 minutes. Stir in salsa and tomato juice; bring to boil. Reduce heat and simmer for 5 minutes.
Meanwhile, slice rolls in half; toast under broiler. Spoon meat mixture over bottom halves; cover with tops.
