Method

In slow cooker, combine potatoes, onion, thyme, salt and pepper; arrange pork chops on top. Pour broth over chops.

Cover and cook on low until pork is tender, 6 to 8 hours.

Transfer pork, potatoes and onion to serving platter; cover and keep warm. Skim fat from liquid in slow cooker.

Whisk flour with 2 tbsp water until smooth; whisk into slow cooker. Cook, covered, on high until slightly thickened, about 15 minutes.

Stir in parsley and vinegar. Pour over chops.
