Feel like having roast beef but want something a little different? Try brisket. This economical cut yields ultra-tender results in the slow cooker, and a simple spice rub boosts the flavour.

In slow cooker, combine onions and carrots. Mix together garlic, paprika, oil, salt, mustard and pepper; rub all over brisket. Place on vegetables in slow cooker. Pour in 1/2 cup water.

Cover and cook on low until brisket and carrots are tender, 6 to 8 hours.

Transfer brisket to cutting board; cover and keep warm for about 15 minutes before thinly slicing across the grain.

Meanwhile, skim fat from liquid in slow cooker. Whisk flour with 1/4 cup water until smooth; whisk into slow cooker. Cook, covered, on high until thickened, about 15 minutes. Serve with brisket.
