Slow Cooker White Bean Soup With Kale and Sausage

  • 8 oz 8ozsummer sausage, cubed
  • 1 1spanish onionspanish onions, diced
  • 1 1large baking potatobaking potatoes, peeled and cubed
  • 3 3cloves garlic, thinly sliced
  • 1 tsp 1tsppaprika
  • 1/2 tsp 1/2tspsalt
  • 1/4 tsp 1/4tsppepper
  • 1 1bay leafbay leaves
  • 2 cups 2cupssodium-reduced chicken broth
  • 2 cups 2cupswater
  • 6 cups 6cupschopped kale leafkale leaves, (about half bunch)
  • 1 can (19 oz/540 mL) 1can (19 oz/540 mL)white kidney beans, drained and rinsed

In slow cooker, combine sausage, onion, potato, garlic, paprika, salt, pepper and bay leaf. Stir in chicken broth and water.

Cover and cook on low until potatoes are tender, 6 to 8 hours.

Discard bay leaf. Stir in kale and beans; cook, covered, on high until kale is wilted and tender, about 10 minutes.
