Potatoes are high on the glycemic index, which makes them a winning choice for athletes who need instant energy. Leave on the skins for a fibre bonus.

Ingredients

  • 6 red-skinned potatoes, unpeeled (2 lb/1 kg)
  • 3 cloves garlic, smashed
  • 1/4 cup hot vegetable stock
  • 1 tbsp butter
  • 1 green onion, chopped
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp grated nutmeg

Preparation

Cut potatoes into 1-1/2 inch (4 cm) chunks. In saucepan of boiling salted water, cover and cook potatoes and garlic until tender, 12 minutes. Drain and return to low heat, shaking pan to dry out potatoes.

Add stock and butter; using potato masher, mash coarsely. Stir in onion, salt, pepper and nutmeg.
