Ingredients
- 6 red-skinned potatoes , unpeeled (2 lb/1 kg)6 6red-skinned potatoes, unpeeled (2 lb/1 kg)
- 3 cloves garlic , smashed3 3cloves garlic, smashed
- 1/4 cup hot vegetable stock 1/4 1/4cup cuphot vegetable stock
- 1 tbsp butter 1 1tbsp tbspbutter

- 1/4 tsp pepper 1/4 1/4tsp tsppepper

Preparation
Cut potatoes into 1-1/2 inch (4 cm) chunks. In saucepan of boiling salted water, cover and cook potatoes and garlic until tender, 12 minutes. Drain and return to low heat, shaking pan to dry out potatoes.
Add stock and butter; using potato masher, mash coarsely. Stir in onion, salt, pepper and nutmeg.
