Snow Peas and Carrots with Sesame and Garlic
Serve this Asian-inspired side dish with chicken and steamed rice or noodles.

3 carrots
2 cups (500 mL) snow peas
1 tbsp (15 mL) each soy sauce, rice vinegar and sesame oil
1 tsp (5 mL) granulated sugar
1 tsp (5 mL) minced gingerroot
4 cloves garlic, minced
1 tbsp (15 mL) vegetable oil
1/2 tsp (2 mL) each salt and pepper
1 tsp (5 mL) sesame seeds, toasted
Preparation:
Thinly slice carrots diagonally. Trim snow peas. Set aside separately.
In bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, ginger and garlic.
In large skillet, heat vegetable oil over medium heat; fry carrots, salt and pepper for 2 minutes. Add 2 tbsp (25 mL) water; cover and steam until slightly tender, about 3 minutes.
Add garlic mixture and snow peas; steam, covered, until tender-crisp, about 3 minutes. Sprinkle with sesame seeds.
