Spicy Chicken Noodle Soup
Who says chicken and noodles has to be bland and boring? The freshness of lime really comes through in this Thai version of a comforting soup.

1/2 lb (250 g) boneless skinless chicken breasts
1/4 lb (125 g) rice vermicelli noodles
1 tbsp (15 mL) ground cumin
1/2 tsp (2 mL) turmeric
5 cups (1.25 L) chicken stock
1/2 tsp (2 mL) grated lime rind
2 tbsp (25 mL) lime juice
2 tsp (10 mL) chopped gingerroot
2 tsp (10 mL) granulated sugar
1 tsp (5 mL) chili paste
1 cup (250 mL) bean sprouts
1 cup (250 mL) coarsely chopped romaine lettuce
2 tbsp (25 mL) chopped fresh coriander
Preparation:
Cut chicken into thin strips. Break noodles into 3-inch (8 cm) long pieces.
In saucepan, combine, garlic, cumin and turmeric; cook over medium heat, stirring constantly, for 1 minute.
Add chicken, stock, lime rind and juice, ginger, sugar and chili paste; bring to boil. Reduce heat and simmer for 5 minutes.
Add noodles; simmer for 3 minutes. Add bean sprouts and romamie lettuce; cook for 1 minute. Ladle into individual bowls and sprinkle with coriander.
