Clean flavours and crisp texture make this a refreshing salad.

Ingredients

    3 English_cucumbers   
    1/2 tsp (2 mL) salt  
    2 tbsp (25 mL) lime juice  
    1 tsp (5 mL) minced seeded hot red pepper
    1/2  tsp (2 mL) granulated_sugar  
    Pinch pepper   
    1/4 cup (50 mL) chopped fresh coriander

Preparation

Peel and seed cucumbers; slice crosswise into 1/4-inch (5 mm) thick slices. Place in colander set over bowl; sprinkle with salt. Let stand for 30 minutes. Drain and gently squeeze out liquid.

In bowl, toss together cucumbers, lime juice, hot pepper, sugar and pepper; cover and refrigerate for 1 hour. (Make-ahead: Refrigerate for up to 24 hours.) Stir in coriander.
