This dip has almost become a classic, although there are several versions. The bread becomes the serving bowl and you can cut or tear the chunks removed to serve with the dip along with assorted vegetables.

Ingredients

  • 1/4 lb cream cheese 1/4 lb cream cheese
  • 1/2 cup mayonnaise 1/2 cup mayonnaise
  • 1/2 cup plain yogurt 1/2 cup plain yogurt
  • 1 pkg (300 g) frozen chopped spinach , thawed1 pkg (300 g) frozen chopped spinach, thawed
  • 2 green onions , finely chopped2 green onions, finely chopped
  • 4 slices crisp cooked bacon , finely chopped4 slices crisp cooked bacon, finely chopped
  • 1 small clove garlic , minced1 small clove garlic, minced
  • Salt and Pepper Salt and Pepper
  • 1 round loaf dark rye bread 1 round loaf dark rye bread

Preparation

In bowl, beat cream cheese with mayonnaise until smooth; stir in yogurt. Squeeze excess water from spinach and chop finely; stir into cream cheese mixture. Add green onions, bacon and garlic; mix well. Season with salt and pepper to taste.

Slice circle of crust from top of bread. Hollow out loaf, leaving shell at least 1 inch (2.5cm) thick, and cutting or tearing removed bread into pieces to serve with dip. Spoon dip into hollowed-out bread.
