6 cups (1.5 L) torn trimmed spinach
4 mushrooms, sliced
4 radishes, chopped
1/2 cup (125 mL) bean sprouts
2 tbsp (25 mL) each olive oil, light mayonnaise and wine vinegar
1 tsp (5 mL) dijon mustard
1/4 tsp (1 mL) each salt and granulated sugar
pinch pepper
Preparation:
In bowl, toss together spinach, mushrooms, radishes, and bean sprouts.
Whisk together olive oil, light mayonnaise, wine vinegar, Dijon mustard, salt, sugar and pepper.
Toss with spinach mixture.
