Spinach Salad and Simple Vinaigrette
This recipe makes 4 servings
Ingredients
- 1/4 cup coarsely chopped roasted red peppers
- 2 tbsp extra virgin olive oil
- 2 tbsp wine vinegar
- 1/4 tsp each salt and pepper
- 4 cups baby spinach
- 1 cup sliced mushrooms
Preparation
In large bowl, whisk together red peppers, olive oil, wine vinegar, salt and pepper. Add spinach mushrooms; toss to coat.
