Starter Tomato Sauce
This simple tomato sauce freezes well and can be seasoned to taste upon thawing.
Servings: 10 cups (2.5 L)
Ingredients:

16 cups (4 L) chopped plum_tomatoes
Preparation:
In heavy saucepan over medium heat, bring tomatoes to boil; reduce heat and simmer, stirring often, until tomatoes are very tender, about 45 minutes. Press through food mill or sieve.
Let cool and pour into freezer containers, leaving 1/2-inch (1 cm) headspace. Freeze for up to 6 months.
