This is a great, simple recipe that really accentuates the natural pea flavour of these tender shoots. If you like it hot, stir-fry two or three whole dried chilies along with the garlic.

Ingredients

  • 1 tbsp vegetable oil
  • 3 cloves garlic, thinly sliced
  • 1 tsp grated gingerroot
  • 1/4 tsp salt
  • 6 cups pea shoots, (or 4 cups snow peas, trimmed)

Preparation

In wok or large skillet, heat oil over high heat; stir-fry garlic, ginger and salt until fragrant, about 30 seconds. Add pea shoots; stir-fry until slightly wilted, about 3 minutes.
