Strawberry Tofu Smoothie

This creamy, smooth, oh-so-easy strawberry drink has a sweet vanilla flavour and tastes remarkably like a strawberry shake. Use fresh strawberries when in season.

    2-1/2 cups (625 mL) vanilla soy milk
    2 cups (500 mL) frozen strawberries
    1/2 cup (125 mL) cubed soft (silken) tofu
    1 tbsp (15 mL) granulated sugar
    1/4 tsp (1 mL) vanilla

Preparation:

In blender, purée together soy milk, strawberries, tofu, sugar and vanilla until smooth.

  • Variations
    Blueberry Tofu Smoothie: Replace strawberries with frozen blueberries.

    Strawberry Yogurt Smoothie: Omit vanilla soy milk; use 1-1/2 cups (375 mL) milk. Replace tofu with vanilla yogurt.
