Sugared Walnuts
These sweets are part of the candy tray known as the tray of togetherness, which brings good fortune.

1 cup (250 mL) granulated sugar
3 cups (750 mL) walnut halves
1/2 tsp (2 mL) ground ginger
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) ground cardamom
Preparation:
In shallow Dutch oven, dissolve sugar in 1/2 cup (125 mL) water over medium-high heat. Add walnuts, ginger, cinnamon and cardamom; bring to boil. Reduce heat to medium; simmer, stirring often, until liquid is crystallized and nuts are coated, about 8 minutes.
Spread walnuts on rimmed baking sheet; bake in 350°F (180°C) oven for 5 minutes. With wooden spoon, break up nuts; bake, stirring once, until completely dry, about 15 minutes. Let cool. (Make-ahead: Store in airtight container for up to 1 week.)
