Sunny Apricot Spread
This topping for toast, bread or bagels gives you a real boost of vitamin A and is lower in sugar than jam.
Servings: 3/4 cup (175 mL)
Ingredients:

3/4 cup (175 mL) orange juice
1/2 cup (125 mL) dried apricots
2 tsp (10 mL) granulated sugar
Preparation:
In small saucepan, combine orange juice, dried apricots and granulated sugar. Bring to boil; reduce heat, cover and simmer for 15 minutes, stirring occasionally. Let cool.
Purée in blender or food processor; transfer to jar or small bowl. (Spread can be covered and refrigerated for up to 1 week)
