The 2001 Canada Day Chicken Challenge Runners-Up

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 onion buns
  • 1 mango, peeled and cut in strips
  • 8 spinach leaves, trimmed
  • 4 thin slices red onions
  • Spread
  • 1/4 cup mayonnaise
  • 2 tbsp chopped fresh parsley
  • 1 tsp light cream
  • 1 tsp mild curry powder
  • Salt
  • Pepper
  • Marinade
  • 1 cup maple syrup
  • 1/4 cup lime juice
  • 1/4 cup extra virgin olive oil
  • 2 tbsp dry mustard
  • Salt
  • Pepper

Preparation

Marinade:
In bowl, stir together maple syrup, lime juice, oil, mustard, and salt and pepper to taste; add chicken, turning to coat. Cover and marinate in refrigerator for at least 30 minutes or for up to 2 hours.

Spread:
In small bowl, stir together mayonnaise, parsley, cream, curry powder, and salt and pepper to taste; set aside.

Reserving marinade, place chicken on greased grill over medium-high heat; close lid and cook for 6 minutes, brushing occasionally with reserved marinade. Turn and cook for about 6 minutes longer or until no longer pink inside.

Cut buns in half; toast cut sides on grill. Spread mayonnaise mixture evenly over cut sides. Sandwich chicken, mango, spinach and red onion in bun.
