Sweet-and-Sour Pineapple Chicken
Serve this kid-friendly chicken, which uses prepared barbecue sauce, over rice.

1 lb (500 g) boneless skinless chicken breasts or thighs
1 tbsp (15 mL) vegetable oil
1 onion, chopped
2 cloves garlic, minced
1 sweet green pepper, chopped
1 cup (250 mL) barbecue sauce
2 tsp (10 mL) soy sauce
1 can (14 oz/398 mL) pineapple tidbits, drained
Preparation:
Cut chicken into bite-size pieces. In large skillet, heat oil over medium-high heat; brown chicken, in batches, 2 minutes.
Add onion, garlic and green pepper; reduce heat, cover and cook until green pepper is tender, about 5 minutes. Add barbecue sauce, soy sauce and pineapple; stir until hot and chicken is well coated.
