A large ham is the main feature of a traditional Swedish julbord, or Christmas buffet table. A simple four-ingredient glaze cuts the richness, complements the ham beautifully and requires nearly zero effort on your part.

Ingredients

  • 9 lb fully cooked bone-in spiral-cut ham 9 lb fully cooked bone-in spiral-cut ham
  • 1/2 cup apple juice 1/2 cup apple juice
  • 3 tbsp grainy mustard 3 tbsp grainy mustard
  • 2 tbsp packed brown sugar 2 tbsp packed brown sugar
  • 1 tbsp apple cider vinegar 1 tbsp apple cider vinegar

Preparation

Place ham, flat side down, on rack in roasting pan; pour in 1 cup water. Cover pan tightly with foil; roast in 325ºF (160°C) oven until meat thermometer registers 130ºF (55ºC), about 2-1/2 hours.

Meanwhile, in small saucepan, bring apple juice, 1/2 cup water, mustard, sugar and vinegar to boil; boil until reduced to 3/4 cup, about 7 minutes. Brush half over ham.

Bake, covered and brushing with remaining glaze halfway through, until meat thermometer registers 140ºF (60ºC), about 1 hour. Transfer to cutting board and tent with foil; let stand for 20 minutes before carving.
