This is the Test Kitchen's favourite burger because it's so juicy with lots of real beef flavour. It's also the basis for variations.

Ingredients

  • 1 egg
  • 2 tbsp water
  • 1/4 cup dry breadcrumbs
  • 1 small onion, grated
  • 2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 lb lean ground beef
  • 4 hamburger or kaiser buns

Preparation

In large bowl, beat egg with water; stir in bread crumbs, onion, mustard, salt and pepper. Add beef; mix just until combined. Shape into four ?inch (2 cm) thick patties. (Make-ahead: Layer between waxed paper in airtight container; refrigerate for up to 24 hours or freeze for up to 1 month. Thaw in refrigerator.)

Place patties on greased grill over medium heat; close lid and grill, turning once, until digital thermometer inserted sideways into centre reads 160°F (71°C), 12 to 14 minutes. Sandwich in buns.

Additional information : Variations
Herb Burgers: Add 2 tsp (10 mL) dried oregano, basil or thyme.

Ginger Burgers: Replace 1 tbsp (15 mL) of the water with soy sauce. Omit salt.  Add 1 tbsp (15 mL) grated gingerroot and 1 clove garlic, minced.

Nippy Cocktail Sauce Burgers: Omit water. Increase bread crumbs to 1/3 cup (75 mL). Add 1/4 cup (50 mL) seafood sauce and 1 tbsp (15 mL) prepared horseradish, drained.
