The Canuck Cluck Grilled Chicken Burger

    4 boneless skinless chicken breasts
    4 whole wheat kaiser buns
    1/2 cup (125 mL) crumbled feta cheese
    1 plum tomato, diced
    4 thin slices red onion
    1/3 cup (75 mL) sliced English cucumber
    Marinade:
    2 tbsp (25 mL) extra-virgin olive oil
    2 tbsp (25 mL) balsamic vinegar
    2 tsp (10 mL) lemon juice
    2 cloves garlic, minced
    1 green onion, minced
    1 tsp (5 mL) dried oregano
    1/4 tsp (1 mL) each salt and pepper

Preparation:

Marinade:
In large bowl, whisk together oil, vinegar, lemon juice, garlic, green onion, oregano, salt and pepper. Add chicken breasts; turn to coat. Let stand for 10 minutes or cover and refrigerate for up to 12 hours.

Place chicken on greased grill over medium heat; spoon any remaining marinade over chicken. Close lid and grill, turning once, until no longer pink inside, about 10 minutes.

Cut buns in half. Sandwich chicken, feta cheese, tomato, red onion and cucumber in buns.
