Ingredients

  • 1/4 cup butter
  • 1/2 cup diced carrots
  • 1/2 cup diced onions
  • 1/3 cup diced celery
  • 2 large garlic cloves, minced
  • 2 tsp grated gingerroot
  • 1 tsp vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp hot pepper sauce
  • 1-1/2 cups fresh bread crumbs
  • 1/3 cup thick teriyaki sauce
  • 2 tbsp ketchup
  • 1 egg
  • 1-1/2 ground caribou

Preparation

In skillet, melt butter over medium heat; fry carrot, onion, celery and garlic until softened, about 5 minutes. Remove from heat. Stir in ginger, vinegar, salt, pepper and hot pepper sauce. Transfer to large bowl; let cool.

Add bread crumbs, half of the teriyaki sauce, the ketchup and egg; mix well. Add caribou; mix with hands just enough to blend.

Scrape into 9- x 5-inch (2 L) loaf pan, pressing to level. Spread with remaining teriyaki sauce. Bake in 350°F (180°C) oven until meat thermometer registers 160°F (71°C), about 1 hour. Let stand in pan for 10 minutes. Drain off any fat. Slice to serve.
